What are you going to do with the Pecorino Romano cheese you have bought at the EXPO in Milan? Are you wondering if there is some uncomplicated recipe to go with it? Do you want to impress your date with some good old kitchen loving?

First things first: get some cold white wine, put on some music and make a shopping list

Ingredients

  • Spaghetti -- 200g
  • Freshly ground black pepper -- 4 tbsp
  • Pecorino Romano cheese -- 100g
  • Salt - a pinch
  • Mint or parsley leaves -- four leaves

As usual these amounts are for a date or a stoner with the munchies

Recipe

Boil water with a pinch of salt (pecorino romano cheese is salty so don't exagerate), drop the spaghetti in and let cook.

In the meantime finely grate all the pecorino romano cheese in a bowl, use a ladle and add some cooking water to the bowl, mix well with a fork so that the cheese melts and becomes a runny cream; now grind a lot (to taste) of fresh black pepper and stir

As soon as spaghetti is al dente (usually 7/8 minutes depending on brand, but check) drain and drop in the bowl with the cream.

Save the cooking water!

Stir well, add a dash o olive oil, if the mix is too creamy just add some more pecorino romano; if it's too dry add some of the cooking water and stir.

Let sit 4 minutes, add some finely cut fresh mint or parsley leaves and a dash of olive oil if you want to show off, and buon appetito!

Done.

Best served with cold chilled white wine, i suggest "EST! EST!! EST!!!", and in company of someone you can love on the kitchen table mid-dinner.
